Christmassy prawn cocktail with pomegranate, ginger & orange mayo

This cocktail is little twist on the retro classic, which makes it perfect for Christmas. It’s an absolute doddle to assemble and can also be made a day or 2 ahead of when you need it and sit quite happily in the fridge. It looks best served in small tumblers but wine glasses or any other small dishes would work just fine. It’s also well worth getting a bottle of pomegranate molasses because it happens to go perfectly with champagne or prosecco for a twist on a kir royale – and can be used in plenty of other sweet and savoury recipes or on its own as a cordial.


Method

Mix together the mayonnaise, pomegranate molasses, ginger & a squeeze of orange juice in a small bowl. Add half of the orange zest, reserving the rest for garnishing your cocktails later. Adjust flavour to taste, you may want more or less of the flavours depending on your preferences.

Take one of your glasses or tumblers and put ¼ of the cold water prawns in the bottom, followed by ¼ of the shredded lettuce. Pack this down in the glass if necessary, you may not need all the lettuce if you had a particularly big one
Layer on top of the lettuce ¼ of your mayonnaise mix. You can spoon this over, or for extra fancy points put the sauce into a piping bag and add it that way
Top with ¼ of the king prawns, ¼ of the pomegranate seeds and ¼ of the reserved orange zest.

Repeat steps 2-5 until all 4 of your cocktails have been assembled. Keep refrigerated until ready to serve.
